For "Soup from chicken giblets with mushrooms" you need:
- water - 2,5 l
- chicken giblets - 700 g
- mushrooms - 100 g
- carrot - 1 piece
- potato - 1 piece
- wheat flour - 20 g
- butter - 20 g
- egg (yolk) - 1 piece
- salt.
Pour prepared giblets by cold water and boil 1 hour on the slow fire, removing the scum with the help of skimmer. Add carrot cut into rings and shredded potato, and boil till the full preparedness.
Filter the broth and add flour, browned in butter till the goldish colour. Put the sliced thin giblets fried till the softness and chopped mushrooms into broth. Bring to a boil and add salt.
Serve up after adding beaten egg yolks.
