For Concentrated broth from poultry recipe you need:
- chicken - 1 piece
- chicken (broiler) - 1 piece
- vegetable oil - 2 tablespoons
- butter - 1 piece (the size of walnut)
- roots (for soup) - 1 bunch
- onions - 1 piece
- black pepper, salt - to taste
- lemon rind (rubbed) - to taste
- lemon juice - to taste.
Dress and wash well the both carcasses. Cut into larger pieces the chicken, separate a bit of subcutaneous fat. Melt this fat, stir with vegetable oil and butter.
Heat up the mixture and add finely cut onion and roots for soup to it, pour with cold water (2 liters of water for 1 kilogram of meat). Then add chicken meat and broiler's giblets (heart, liver, stomach), neck, wings, and boil 2-3 hours. When chicken meat becomes soft, filter the broth and put broiler's carcass into it. Cook while boiling, and before the end of boiling add black pepper, lemon rind and salt to taste. Filter the broth, remove the scum, and then use according to its intended purpose. Add lemon juice when serving up.
Use the boiled meat of chicken and broiler for preparing other dishes.
